Why results differ from kitchen to kitchen

The recipes here are written to be clear and dependable, but a finished dish will still shift with the flour you buy, the strength of your burner or oven, the height you live at and how often you have used the method before. Treat the stated times and amounts as a sound place to begin, not as a promise.

Safe handling stays with the cook

Recipes that use raw meat, poultry, eggs, dairy or hot oil carry notes on safe internal temperatures and storage times. Those notes are offered in good faith, yet the person at the stove remains responsible for sound handling: confirming that ingredients are fresh, cooking meat and poultry through to a safe temperature, and throwing away anything that may have turned.

Nothing here encourages stretching the life of frying oil beyond what is safe, for example by heating it again and again past its smoke point, topping up old oil with new without end, or keeping used oil badly.

No medical or dietary guidance

The library is not a source of medical, dietary or nutritional advice. It carries no calorie figures and makes no suggestion that an ingredient can treat, prevent or cure an illness. Anyone with an allergy, an intolerance or a condition shaped by diet should speak with a qualified professional and read every label before cooking or eating.

History and place of origin

Accounts of where a dish began are researched with care, but food history is frequently handed down by word of mouth and can be incomplete or argued over. When a point is uncertain or contested, the text says so rather than dressing it up as settled.
